NOTE
When the temperature drops to around 5 º C, some of the fatty acids contained in olive oil begin to freeze. Before freezing, olive oil takes on a cloudy appearance.
Simply hold the bottle of olive oil up to a heat source and the oil will return to its previous appearance. Of course, the oil is in perfect condition and ready to consume.

Store at room temperature, protected from heat and light.
The “mild” extra virgin olive oil delicately perfumes your dishes.
It is in December that its fruits begin to ripen, the olives turn purple, then black when they are ripe and harvested. From December to March only the ripe olives are picked and the master oil makers crush them the same day they are picked. The olives crushed into paste are placed in a centrifuge. By the force of gravity alone, the oil separates from the juice of the olives. Before bottling, the oil is filtered on filter paper.
